E-bike tour with a visit to a cheese factory and a tasting of dairy products

Discovering the PDO mozzarella of Gioia Del Colle

Our e-bike tour will take us along rural paths connecting the towns of Gioia Del Colle, Laterza and the beautiful Matera (a UNESCO heritage site).
We will ride through ancient iazzi (stone enclosures used for animals) and fortified farmhouses, pine groves and cultivated fields.
We will stop at a fortified farmhouse built way back in the 1800s and then continue our bike ride to the charming Iazzo of Grotta Caprara.
The tour covers a large rural area where many farmers breed cows that provide much of the milk used to produce the mozzarella of Gioia del Colle, recognised as PDO by the EU.
Here, in the rural heart of Puglia, we will visit a traditional cheese factory where fresh dairy products such as mozzarella, burrata, fiordilatte and stracciatella are made every day.
We will visit various areas of the factory such as the milking room and the production department and watch the master cheesemaker as he processes the curd into products ready to be sold and eaten.
This gastronomic experience ends with a tasting of four typical local dairy products: mozzarella, fresh cheese, seasoned provolone and “bomba di latte”.
At the end of the tasting, we will cycle back to Gioia del Colle.
