The phases of olive harvest

The experience includes sharing the different moments in the production of extra virgin olive oil: from the harvest of the olives, to the transformation into a mill, to the tasting of the newly produced olive oil.
During the day, you will learn how extra virgin olive oil is produced, visit as well as get to know the different phases and places of olive cultivation up close.

The experience is structured as follows:

1. introduction to the territory: between ancient lamia and majestic centuries-old olive trees;
2. a jewel of our oil tradition: an ancient underground oil mill;
3. how extra virgin olive oil is produced: comparison of current pressing techniques with that of the past;
4. visit to the warehouse and bottling plant of extra virgin olive oil;
5. tasting extra virgin olive oil new and organoleptic qualities of a high-quality olive oil.

The most characteristic moment of this unforgettable experience is the harvest: in fact, guests will have the opportunity to try their hand at the manual olive harvesting technique. It will be performed using “combs” or a hand rake with a net placed under the tree. Specialized technical staff will accompany the guests in this delicate phase.
To make the experience even more pleasant, an aperitif will be served on the farm, as a moment of relaxation between the different stages of the tour.
