The production process of our Apulian evo oil will be revealed during our tasting tour experience. Let us bring you in a farm nestled in the monumental “Plain of millennial olive trees” in Puglia, where the surrounding rural countryside will be unveiled to you.
Come and visit an authentic XVIII Century Masseria. We will let you discover the centuries-old olive trees from Puglia.
You will get into an old frantoio ipogeo to discover the ancient methods used for olive oil production. Then you will enter an authentic modern olive oil mill and learn about the current processing phases.
The tour will end tasting different varieties of olive oil: guided by an expert you will discover all the secrets of this extraordinary Apulian specialty. Together we will learn how to recognize a good extra virgin olive oil through a professional tasting experience.

A 4-generation long tradition

In this magnificent Apulian masseria, between fertile ground and clear waters, olive trees have been growing for the last 4 generations by farmers’ expert hands. Season after season, a long-standing tradition turns olives into exceptional quality olive oil after every single harvest.
In the masseria different olive oil production methods are used: the traditional one and the organic one.

During the tour you will find out the peculiarities of olive oil:

  • Monovarietal extra virgin olive oil from the following varieties: “Coratina”, “Peranzana”, “Ogliarola Salentina”. They best represent the typical Apulian olive types, each one with its proper characteristics;
  • Organic extra virgin olive oil: olive varieties “Frantoio”, “Leccino” and “Coratina” are blended to obtain extraordinary quality oil;
  • “Acerbo” extra virgin olive oil: marked character and bitter traits for those who love fullness of flavour; it comes from blending “Coratina” and “Peranzana” olives;
  • Classic extra virgin olive oil: the mixture of “Frantoio”, “Leccino” and “Ogliarola” olive varieties generate a fresh, sweet olive oil appealing for all palates.

Beautiful location, easy to get to. Very interesting and highly informative tour of the site. We loved how passionate everyone was about their olive trees, their products and the family-run nature of the business. The tasting was great fun and the oil was wonderfully good quality. This is an amazing experience if you’re keen to learn about olive oil. Incredibly interesting to see how it was made historically and currently in the modern day, tasting different oils is also really interesting, and there is so much more to it than you would think. Rosaria is a fabulous host, and there is nothing that she does not know about Olive oil! A lovely little goodie bag send you on your way, and no pressure too but anything else, but loads to choose from is you want to. Can’t recommend this experience highly enough!

This was a truly unique experience. Rosaria was passionate, knowledgeable and so kind! My parents and I were there at Christmastime and so we were on our own. She took her time explaining each aspect of the process beginning in an ancient cellar describing the ancient olive oil making practices, continuing on to modern day and finishing with a tasting. We saw beautiful 1000 year old trees and met her lovely dogs as well!

We had such an amazing time visiting the olive oil production and farm. Our guide was super informative, and it was lovely to see the beautiful grounds of the olive orchard. We loved every second of it! I was a little worried about the weather coming in December, but Marco made sure the sun was out for us and we got to see the beautiful farm and meet many members of the family. it was really cool also to see the actual production of the oil due to the time of year we visited. Thank you so much for your amazing tour and olive oil tasting!
