How is Capocollo made?

The tour will start from the production plant; you will see with your own eyes how Apulian salami are made. An experienced mastro salumaio (master butcher) will show and tell you in person about the whole manufacturing process of Capocollo. This will be a sight for your eyes and your nose!
You will see how hand craftedmeat cuts turn gradually into fine and typical products of Apulian pork-butchery.
The traditional artisan production of Capocollo passes through distinct phases: curing, marinating, filling, smoking, aging.
Each one of these phases completely merge with the environmental characteristics of the land where the Capocollo di Martina Franca is produced.
Capocollo, Soppressata, Salami, jowl bacon, pork loin fillet, rolled bacon, lard: these are just some of the specialities made at the salami factory, right where you will enjoy your tasty foodie experience.

Typical Apulian salami tasting

After watching and learning about artisan production methods of Apulian salami, the long-awaited moment of your foodie experience will come: salami tasting.
