Are you a lover of Burrata mozzarella and cheese made in Puglia? Would you like to learn how to make typical products like burrata and mozzarella with your own hands? You have chosen the right cooking class then!

The experience Learn how to make burrata and mozzarella in Masseria will take you to the heart of one of the symbols of Puglia: an ancient farmhouse (Masseria). You will discover, together with a guide, how is a typical Apulian farmhouse and what are the craft activities that take place there inside its ancient walls.
The cooking course will be held by a professional cheesemaker that will reveal the ingredients, teach you the gestures and all the other details of the cheese making process of these two goodness.
After the guided tour, in which you will also see the production workshop of the cheese factory of the farm, the time will come to try our tasty pugliese dairy products: mozzarella and burrata.

Taste the delicious mozzarella and burrata handcrafted

The tour will end with a rich tasting of dairy products, local cured meats like the famous Capocollo di Martina Franca, of wood-fired oven products of the farm, all accompanied with Apulian wine.
The tasting of typical products, on request, can be replaced by a complete menu prepared with the products of the organic garden from the restaurant of the farm.

The guided tour of the farm

During the guided tour you will discover:

  • the ancient part of the farm and the modern farm recently restored;
  • how the characteristic Apulian trulli are made;
  • the ancient local stone church;
  • animal husbandry;
  • the organic garden;
  • an Apulian dairy where dairy products and cheeses are produced such as mozzarella, burrata and caciocavallo;
  • the wood-burning oven that produces bread, pasta, friselle and puglia taralli every day.

The farm where you will live this experience is located in the heart of Valle d’Itria, a few kilometers from its characteristic villages as Martina Franca, Ostuni, Cisternino, Alberobello and Locorotondo.

Loved learning how the cheeses were made and could spend even more time learning about other sorts of cheese and seeing what else the farm produces. My only recommendation would be to serve a little less burrata because it was so much cheese and so much cream at 1130 in the morning!! But it was delicious and we really enjoyed our time, and the cheese maker Umberto.
