The cheese tasting tour takes place in a dairy farm located in the charming Valle d’Itria, not far from the villages of Martina Franca, Locorotondo, Alberobello and Cisternino. Its ancient building dates back to the 17th Century, it is surrounded by cultivated lands, muretti a secco (dry stone walls), characteristic trulli made with stones, vineyards and olive groves.
The tour begins admiring the magnificent surrounding rural landscape, which concentrates some of the main landscape and architectural icons of Puglia. It continues with a visit to the small private consecrated chapel and to the rural core of the farm: the ancient central courtyard.
The trulli made with local stones surround the courtyard and in the past they were the stables used to shelter animals. Now, they are comfortable places of stay well-equipped with all modern comforts, fully restored respecting their original rural identity.
The guided tour then moves to one of the most charming locations of the farmhouse: the cheese factory. This is the place where delicious dairy products know and appreciated all over the world are processed every day. Who doesn’t know the creamy burrata, the delicious mozzarella, the soft fiordilatte or the fine caciocavallo?
It will be possible to see master cheesemakers while they are hand-making these excellent products and you will also have the opportunity to taste some of the freshly made products. What a pure delight!
The tour ends at the cattle sector, where the precious fresh milk is milked every day and then brought to the cheese factory where it is processed into dairy delicacies.
The experience will take you in the rural heart of Puglia, in an ancient farmhouse, with its massive stone walls painted with white lime and with its characteristic trulli, with their unique shape.
The tour is an educational experience about the ancient Apulian rural world, which is here still preserved, thanks to the farming and breeding techniques.
The Apulian food and wine tradition is here stille alive; its authenticity derives from the agricultural productions, which respect the seasonality of the products and the surrounding environment.

Ancient masseria (farmhouse) dates back to the 17th Century
Loved that the tour was not rushed, we were able to ask questions and really learn. The cheese factory part was amazing (little hard to hear) and loved the tasting there. However, the additional tasting at the end was not worth the extra money. Outside of that, lovely grounds and even looks like a nice place to stay (B&B part) with pool. Very family oriented. Amazing how they are very self sufficient and produce so many goods now.
Bellissima esperienza per grandi e piccoli.. una masseria storica, oggi azienda agricola di discrete dimensioni, con spazi esterni molto curati e gradevoli per una giornata all’aperto. La visita accompagnata da Marco è molto interessante, e con contenuti e approccio che ben si adattano anche ai bambini. Le mie figlie (15 e 11 anni) sono rimaste particolarmente affascinate dalla visita del caseificio, con spiegazione della lavorazione dei latticini, diretto coinvolgimento per la preparazione di qualche nodino e burrata, e assaggio del prodotto appena fatto. E’ valsa sicuramente la pena di dedicare un paio d’ore a questo turismo esperienziale/didattico.
Il momento finale della degustazione è apprezzabile, anche se un po’ secondario – a mio parere – in una vacanza che in Puglia è già ovunque all’insegna del cibo.

It was an amazing experience! We had a possibility to see cheeses production . Marco explained us every step of it. We did our mozarella and burrata. Then we could taste them, It was fun! Marco shown us farm and gave us a general overwiew about an italian masseria. After the tour in the restaurant were served for us local cheeses, cham, delicious fresh bred, wine and even dessert ! That’s extremely good value for money.
