What is this experience about?

An expert local chef will teach you how to make bombette, one of the most popular local meats in Puglia.
The cook will show you the ingredients (all selected and of high quality) necessary for their preparation. You will then be explained how to roll the meat so that it does not open during the cooking phase.
The preparation phase is followed by the cooking: traditionally it takes place “al fornello” (cooked in wooden-fired stone ovens) or in a small oven at a temperature of about 200 °C for 30 minutes. The meat is put on a long spit and then placed vertically on the opposite wall from where the embers (generally made of oak charcoal) burn. This process is therefore indirect cooking.
Alternatively, the meat can be barbecued; it is placed vertically on hot charcoal. In this case the cooking process is quicker because it is direct. Finally, it can also be cooked in a pan or in an electric oven.
The cooking class ends with a rich tasting of bombette accompanied by other typical local products and good Apulian wine.
